SLOW COOKER WEDNESDAY: BBQ Pulled Chicken

BBQ Pulled Chicken

Hello, my friends!

It’s Wednesday, the busiest day of the week in my house.

That means another Slow Cooker dinner

Here’s another amazing dish that tastes like I slaved all day.

Except I didn’t.

All I did was throw 5 ingredients in the slow cooker and run out the door.

Shh.  Don’t tell my husband.

Today’s recipe: BBQ Pulled Chicken

It works for lunch or dinner, any day of the week.

It’s great for potluck dinners.

I last made it for a friend who had back surgery.  She was in bad shape and I wanted to do something for her, but was short on time.  Her husband raved about it!

I’ve made it with boneless, skinless chicken breasts (my picky kids love white meat), but you can use boneless chicken thighs if you like dark meat.

Another option is to go classic, and use pork shoulder for pulled pork.

Serve on a hard roll, with some coleslaw, and you’re all set!

You’re welcome.

Ready? Here’s what you need:

6 boneless, skinless chicken breasts, frozen or fresh
1 bottle of barbecue sauce, 12 oz.
Italian salad dressing, 1/2 cup
brown sugar, 1/4 cup
worcestershire sauce, 2 tbsp.

For those who prefer a visual list, here ya go!

BBQ Pulled Chicken Supplies

First, place the boneless, skinless, chicken breasts in the slow cooker.

In a mixing bowl, whisk together barbecue sauce, italian salad dressing, brown sugar and worcestershire sauce.

Once mixed well, pour sauce over the chicken.

Now, turn your slow cooker on and set your timer.

Cook on high for 3 hours, or low for 6 hours.

Just before serving, remove chicken and shred on cutting board using two forks.

Fold chicken back into crockpot and let sit for 5 minutes so the chicken can soak up the sinfully delicious sauce.

After 5 minutes, it’s ready to serve.

Grab your favorite roll and layer on a big spoonful.

Add a dollop of coleslaw.  Or not, if that is your preference.

I’ll take some, thank you very much.

Yeaaah, baby.

Please excuse me… I have some chowing down to do.

See you next Wednesday!
